DIABETIC CHRISTMAS CAKE
Place dried fruit in non-metal bowl.
Pour ginger ale over and soak over night.
Lightly beat eggs.Add eggs and carrot to fruit mixture.
Sift flours, cinnamon, mixed spice, baking powder and baking soda into mixture.
Return any bran flakes left in sifter from wholemeal flour to mixture.Mix well tio combine.
Spoon mixture into a lined tin.
Tie four layers of newspaper around the outside of the tin to stand about 5cm abovr the top
of the tin.
Stand the tin on six layers of newspaper in the oven.
Bake at 160 degrees for 1 1/2 hours or until an inserted skewer comes out clean.
