BIG DAVE'S THIN PIZZA

  • 1 package Yeast
  • 1 cup Water, hot
  • 1/2 teaspoon Salt
  • 2 teaspoons Olive oil, virgin
  • 2 1/2 to 3 1/2 cup Flour, all-purpose
  • 4 - 6 tablespoon Corn meal, yellow
  • SAUCE: Pizza Sauce
  • 1 (12 oz) can Tomato - Diced
  • 1 small can Tomato paste
  • 2 tablespoons Butter, unsalted
  • 1/2 teaspoon Oregano, dried
  • 1/2 teaspoon Thyme, dried
  • 4 tablespoons Basil, fresh
  • CRUST:

    This recipe yields enough dough for 2 (TWO) 14" pizzas.

    Preheat oven to 450°

    Dissolve yeast in warm water in warmed mixer bowl. Add salt, EVOO (Extra Virgin Olive Oil), and 2½ cups flour. Attach bowl and dough hook to mixer. Turn to Low speed and mix about 1 minute.

    Slowly add remaining flour a little (½ cup) at a time and mix until dough clings to hood and cleans sides of bowl, about 2 -3 minutes then continue kneading about 2 more minutes.

    Place dough in a greased bowl, turning to grease all sides. Cover for about 10 minutes. DO NOT LET RISE !!! or your dough will not be thin and crispy.

    Split dough into equal portions and flatten into round disc. Using a limited amount of flour, roll out each dough to slightly larger than your 14" pizza pan.

    Brush 14" pizza pan with EVOO, sprinkle with cornmeal, place rolled out dough on pan and fold over any excess dough hanging over edge of pan. USING A FORK, PRICK THE BOTTOM OF DOUGH GENEROUSLY, I MEAN ALOT! to allow air to get out and crisp up the dough.

    Place in oven and precook as desired without letting the dough brown too much.

    Remove and add sauce, toppings etc.

    SAUCE:

    This recipe yields enough for 2 pizzas

    In a small saucepan mix Tomatos, Paste, Butter, Oregano and Thyme and warm only, no need to boil or burn.

    LIKE IT HOT ?? add up to 1/4 teaspoon Crushed Hot Red Pepper to a little zing to your sauce.

    To prepare, when you remove Crust from precooking, spread 1/2 of the sauce on one pie and add cheese and toppings then FINISH WITH ½ OF THE FRESH BASIL. Drizzle a little EVOO on top before returning to 450° to cook until cheese starts to show signs of being GOLDEN.

    For toppings:

    Use precooked meats ( ie Sweet Italian Sausage, Bacon, Hamburger etc ), Bell Peppers, Onions, Mushrooms etc. BE CREATIVE and ENJOY !!
