LEMON CHOCOLATE CHIP MUFFINS
Finely grate lemon rind.
Beat sugar and butter until pale and creamy.
Add eggs ,one at a time ,beating well after each.
Stir in baking soda and grated peel.Add lemon juice.
Fold in half the flour then half the buttermilk.Repeat.
Fold in chocolate chips.
Put in sprayed muffin tinsand bake at 375°for 20-25 minutes.
Remove from oven and brush with extra lemon juice if desired.
Let stand 10 minutes before removing from pans.
