DUTCH APPLE CAKE

  • 3 Med Peeled tart apples, slice 1/4" thick
  • 1 c plus 3 T Sugar, divided
  • 1 t Ground cinnamon
  • 2/3 c Butter, softened
  • 4 Eggs
  • 1 t Vanilla
  • 2 c Flour
  • In a bowl, combine the apples, 3 T sugar and cinnamon; let stand for 1 hour. In a mixing bowl, cream butter and remaining sugar. Add eggs, one at a time, beating well after each. Add vanilla. Combine flour and salt; gradually add to creamed miture and beat until smooth. Pour into a greased 9" x 5" x 3" loaf pan. Push apple slices vertically into batter, placing them close together.

    Bake at 300° for 1 hour and 40 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes on a wire rack. Remove from pan. Serve warm.

    Yield: 10 -12 servings.
