Cakes and Frostings

DELICIOUS CUPCAKES - 12 WAYS

  • 1 3/4 c Flour
  • 1 pkg. 3/4 oz Instant vanilla pudding mix
  • 2 tsp Baking powder
  • 1/4 tsp Salt
  • 1 1/4 c Milk
  • 1 Egg
  • 3/4 c Sugar
  • 1/2 c Melted butter, cooled
  • 1 can 16 oz Vanilla Frosting
  • Preheat oven to 375°. Line 12 muffin cups with cupcake liners. Combine flour, dry pudding mix, baking powder, and salt. In another bowl, combine milk,egg, sugar and butter. Stir in flour mixture until smooth. Divide among muffin cups.

    Bake 22 - 25 minutes or until toothpick inserted in the centers comes out clean. Cool. Frost.

    1. MandM - stir 1/2 c mini mandm's into batter. Spread cupcakes with vanilla frosting; top with mini MandM's.

    2. Chocolate Malt - stir 1/2 c malt powder into batter. Spread cupcakes with milk chocolate frosting. Top with halved chocolate malt balls.

    3. Chocolate Coconut - stir 1 1/3 c flaked coconut and 1 tsp coconut extract into batter. Spread cupcakes with milk-chocolate frosting, top with coconut.

    4. Mint Chocolate Chip - stir 1/2 mini chocolate chips into batter. Tint and flavor 1 can vanilla frosting with green food coloring and 1/8 tsp mint extract. Spread over cupcakes; top with chopped Andes Candies.

    5. Lemon Poppy Seed - stir 4 tsp grated lemon zest and 1 T poppy seeds into batter. Spread cupcakes with lemon frosting; top with fruit slice candies - lemon.

    6. Chai Spice - stir 1/4 t each ground cinnamon, ground cloves, ground cardamom and white pepper into batter. Spread cupcakes with vanilla frosting. Sprinkle with ground cinnamon.

    7. Sour Power - stir 1 envelope (.13 oz) unsweetened cherry flavored Kool-Aid soft drink mix into batter. Spread cupcakes with vanilla frosting, top with sprinkles.

    8. Peanut Butter and Banana - substitute instant banana pudding for vanilla. Stir 1/3 c creamy peanut butter into 1 can vanilla frosting, spread over cupcakes. Top with chopped peanuts.

    9. Double Chocolate - substitute 1 pks chocolate pudding mix for vanilla. Stir 1/2 c mini chocolate chips into batter. Spread with chocolate frosting. Top with chocolate chips.

    10. Spumoni - substitute pistachio pudding for vanilla; stir 1/2 c mini chocolate chips into batter. Spread cupcakes with strawberry frosting; top with maraschino cherries.

    11. S'mores - stir 1/2 c mini chocolate chips into batter. Spread cupcakes with milk chocolate frosting; top with graham cracker pieces and mini marshmallows.

    12. Orange Creamsicle - stir 2 tsp grated orange zest into batter. Stir 1 tsp grated orange zest into 1 can vanilla frosting, spread over cupcakes.
