PINEAPPLE- OATMEAL BARS

  • 1 1/2 cups Sugar
  • 2 tablespoons Cornstarch
  • 2 1/4 cups Pineapple, crushed drained
  • 1 1/2 teaspoons Lemon juice
  • 2 1/4 cups Oats, quick-cooking
  • 2 1/4 cups Flour
  • 1 1/2 cups Brown sugar, packed
  • 3/4 teaspoon Baking soda
  • 1 cup & 2 teaspoon Butter
  • Filling-Simmer first 4 ingredients over medium heat, until thick. Remove from stove and cool.

    Crust- Combine dry ingredients and cut in butter. Blend until crumbly. Press 2/3 of the mixture firmly in a 9 x 13 pan. Add filling and sprinkle remaining crust over the filling. Bake 350° for 30 minutes.
