JAMAICAN PORK WITH CREAMY LIME SALSA

  • 1/2 cups Mayonnaise
  • 1 tablespoons Lime juice
  • 1/4 cups finely chopped Onions,red
  • 1 clove Garlic, finely minced
  • (Optional) 1/4 tsp. Lime peel, grated
  • 1/4 teaspoons Black pepper, coarsely ground
  • 4 large 3/4" thick Pork chops, boneless
  • 1 tablespoons Jamaican jerk seasoning
  • (Optional) 1 seeded, peeled and sliced Mangos
  • For salsa, in a medium bowl, blend mayonnaise, lime juice, onion, garlic, lime peel and pepper. Set aside.

    Evenly season pork chops wit jerk seasoning. Grill or briol chops until done. To serve, arrange chops on serving platter, then gernish with mangos and salsa. Serve with remaining salsa.

    NOTE: Boneless chicken breasts or halibut steaks can substituted for the pork chops.
