GRILLED CORN WITH SEASONED BUTTERS

  • 6 ears Corn, fresh, still in husk
  • 1/3 cups Butter, unsalted
  • Mix the ingredients of your choice into the softened butter.

    Pecan butter:

    1/3 cup groung pecans.

    .

    Lime butter:

    1 Tbs. grated lime zest.

    1 Tbls. fresh lime juice.

    .

    Chili butter:

    2 Tbls. chili powder.

    1 tsp. cuman seeds.

    .

    Italian herb butter:

    2 tsp. minced fresh basel.

    2 tsp. minced fresh oregano.

    .

    .

    Working one ear at a time, carefully pull back the husks but leave them attatched. Remove and discard the silk, then repace the husks. Soak the ears in cold water for at least 20 minutes and then drain.

    Carefully pull back the husks from each ear and spread the seasoned butter evenly over the kernels. Replace the husks.

    Place the corn on the grill rack, cover, open the vents, and grill until the husks are browned and the kernels are tender, about 15 minutes.Serve hot.
