Cookies

COCONUT OAT COOKIES

  • 1 1/4 cups Shortening
  • 1 cups Sugar
  • 1 cups Brown sugar
  • 2 Eggs
  • 1 teaspoons Vanilla
  • 2 1/4 cups Flour
  • 1/3 teaspoons Baking soda
  • 2 teaspoons Baking powder
  • 1/2 teaspoons Salt
  • 1 cups Oats, quick-cooking
  • 2 cups Coconut
  • 1 cups Nuts, chopped
  • Sift together and set aside flour, soda, baking powder and salt. Blend together both sugars and shortening. Add eggs and vanilla and beat smooth. Gradually add flour mixture and mix until smooth. By hand, add oats, coconut and nuts.

    Refrigerats one hour. Roll into 1" balls and place on ungreased cookie sheet. Bake at 300° for 15 minutes.
