Salads and Dressings

CLASSIC MANDARIN ORANGE SALAD

  • 1/4 cups Olive oil
  • 4 teaspoonss Balsamic vinegar
  • 1 1/2 teaspoons. Dijon mustard
  • 1/4 teaspoons Salt
  • 1/4 teaspoons Black pepper
  • 1/2 pounds Spinach, fresh
  • 1 cans Manderin orange segments
  • 1/2 cups Black olives, sliced
  • 1/2 cups Red onion, sliced
  • 1/4 cups Feta cheese, crumbled
  • Combine oil, vinegar, mustard, salt and pepper in small bowl. Stir until blended.

    Combine spinach, oranges, olives and onion in large serving bowl.

    Pour dressing over salad; toss evenly to coat. Top with feta cheese.
