CHICKEN CORDON BLEU

  • 4 Chicken breasts, boneless, skinless
  • Salt and pepper to taste
  • 8 slices Swiss cheese
  • 4 slicess Ham,cooked
  • 2 cupss Bread crumbs, seasoned
  • 2 Eggs, beaten
  • Preheat oven to 350°. Coat a 7" by 11" baking dish with cooking spray.

    Pound and flatten chicken breast between wax paperto about 1".

    Sprinkle both sides of chicken with salt and pepper. Place 2 cheese slices and 1 ham slice on top of each breast.

    Roll up each breast and secure with wooden toothpick(s). Coat each piece with egg mixture and then dip into breadcrumbs. Place in baking dish.

    Bake for 40 -45 minutes or until chicken is no longer pink.
