CHICKEN CACCIATORE

  • (8) 1 kilogram Chicken, pieces or
  • 1 kilogram Chicken breasts, cubed
  • 1 medium Onions, finely chopped
  • 1 small Chili, finely chopped
  • 2 or 3 cloves Garlic, finely chopped
  • 400 gram Tomatos, crushed
  • 1 (140gm) tub Tomato paste
  • 1/2 cup Red wine, dry
  • 1/2 cup Water
  • 1 packet Chicken Cacciatore
  • 1/4 cup Pitted black olives, sliced (optional)
  • any other Herbs or spices you want
  • Mix all ingredients then add chicken and let marinade for 1 to 2 hours (optional).

    Preheat oven to 200°Celcius.

    Put ingredients in casserole dish, cover.

    Bake 1 1/2 hrs or until chicken is cooked (depends on if you are using pieces or breasts). Stir twice during cooking.

    Stir in olives.

    Goes well with mashed potato or pasta and vegetables.
