CHICKEN WITH PARMESAN RICE
Cook rice in large saucepan as directed on pkg. Meanwhile, cook chicken in large nonstick skillet on medium-high heat 3-4 minutes on each side or until cooked through. Season with the salt and pepper. Add cheese, tomato, onions and vinegar to the rice; stir until well blended. Spoon onto serving plate; top with the chicken.
If desired: substitute 1 large chopped red pepper for the tomato.
