CHICKEN WITH PARMESAN RICE

  • 2 cups Brown rice, uncooked
  • 4 Boneless chicken breast, cut in strips
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1 cup Parmesan cheese
  • 1 large Tomatos, fresh, chopped
  • 1/3 cup Green onion slices
  • 1 tablespoon Balsamic vinegar
  • Cook rice in large saucepan as directed on pkg. Meanwhile, cook chicken in large nonstick skillet on medium-high heat 3-4 minutes on each side or until cooked through. Season with the salt and pepper. Add cheese, tomato, onions and vinegar to the rice; stir until well blended. Spoon onto serving plate; top with the chicken.

    If desired: substitute 1 large chopped red pepper for the tomato.
