CREAM FILLING FOR CREAM PUFFS AND CHOCOLATE ECLAIRS

  • 1/3 cup Sugar
  • 2 tablespoons Cornstarch
  • 1/8 teaspoon Salt
  • 2 cups Milk
  • 2 Egg Yolks, slightly beaten
  • 2 tablespoons Butter, softened
  • 2 teaspoons Vanilla
  • 1. In a 2qt saucepan, mix sugar, cornstarch and salt. Stir in milk. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Stir at least half of the mixture gradually into egg yolks. Blend into hot mixture. Boil and stir 1 minute. Remove from heat; stir in butter and vanilla. Cool.
