ZITI WITH SPINACH AND CHEESE SAUCE

  • 1 (10 oz) package Frozen Spinach
  • 1/2 pound Ziti
  • 4 tablespoons Butter
  • 1 teaspoon Salt
  • 1 cup Ricotta Cheese
  • 1/2 cup Parmesan cheese
  • Black pepper, coarsely ground
  • 1. Thaw spinach according to pkg directions; drain. Squeeze as much liquid from spinach as possible.

    2. Cook pasta according to pkg directions.

    3. While pasta is cooking, melt half the butter in a large skillet. Add spinach and saute over med heat for 3 minutes, turning frequently. Sprinkle with salt.

    4. Drain cooked pasta and add to spinach along with remaining butter and other ingredients. Toss gently over low heat until combined. Serve.

    Serves 6-8
