SCALLOPED TOMATOES

  • 1 Garlic clove, minced
  • 4 tablespoons Butter, melted
  • 1 cup Mushrooms, finely chopped
  • 1 cup Ritz Crackers, crushed
  • 2 teaspoons Parsley, dried
  • 1/2 teaspoon Salt
  • 1/8 teaspoon Pepper
  • 6 medium Tomatoes, quartered
  • 1. Preheat oven to 400°. Grease an 8 inch square baking pan.

    2. In a skillet, saute garlic in 2 tbls butter for 2 minutes. Add mushrooms; cook until heated through. Remove from heat. Add cracker crumbs, parsley, salt, pepper and remaining butter; mix well. Place tomatoes in prepared baking dish. Top with the mushroom mixture.

    3. Bake, uncovered, at 400° for 20 minutes or until heated through. Makes 6 servings.
