BROCCOLI CASSEROLE

  • 1 teaspoon Onion powder
  • 1 (10-3/4 oz) can Cream of Mushroom Soup
  • 3 Eggs, beaten
  • 1 cup Mayonnaise
  • 1 cup Parmesan cheese
  • Salt and pepper to taste
  • 3 (10oz each) packages Frozen Broccoli, cooked and drained
  • 1 1/2 tubes Ritz Crackers, crushed
  • 1/2 cup Butter, melted
  • 1. Preheat oven to 350°. Grease an 11x7 inch casserole dish.

    2. Mix all ingredients, except crackers and butter. Pour into prepared dish.

    3. Mix crushed crackers and melted butter. Sprinkle over broccoli mixture.

    4. Bake for 40-45 minutes.

    Serves 12-15, but recipe can easily be divided by thirds for smaller groups.
