CHICKEN CROQUETTES

  • 3 (12.5oz) cans Chicken, drained
  • 1 cup Rice, cooked
  • 1/2 tablespoon Celery seed
  • 2 tablespoons Minced Onion
  • 1 teaspoon Flour
  • 3/4 teaspoon Salt
  • 1/4 teaspoon Poultry Seasoning
  • 1 Eggs, beaten
  • 3/4 cup Dry Bread Crumbs or Corn Flake Crumbs
  • Oil for frying
  • 1. Heat oil in deep fat fryer to 375°.

    2. Combine chicken, rice, celery seed, onion, flour and seasonings. Stir in egg. Shape into croquettes. Coat with bread crumbs.

    3. Fry croquettes in hot oil for 2-5 minutes until brown. Drain on paper towels. Serve warm.

    Makes 8-10 croquettes
