BASIC TRUFFLES

  • 1 1/2 pounds Chocolate, bitter-sweet
  • 2/3 cup Cream, Heavy
  • 1. In a medium saucepan over medium heat, combine chocolate and cream. Cook, stirring, until chocolate is melted and mixture is smooth. Remove from heat. (You may optionally whisk in a liquid flavoring of your choice, to taste.) Pour into small dish and refrigerate until set, but not hard, 1 1/2 to 2 hours. Form into balls. You may optionally roll in toppings of your choice (nuts, candy bits,...)
