Cakes and Frostings

CHOCOLATE MAYONNAISE CAKE

  • 2 c Flour
  • 1 c Sugar
  • 1/4 c Baking cocoa
  • 2 t Baking soda
  • Dash Salt
  • 1 c Water
  • 1 c Mayonnaise
  • 1 t Vanilla extract
  • Confectioner's sugar
  • In a large mixing bowl, combine the dry ingredients. Add the water, mayonnaise and vanilla; beat on medium speed until well blended.

    Pour into a greased 9 in. square baking pan. Bake at 350° for 30-35 min. or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Just before serving, sprinkly with confectioner's sugar. Yield 9 servings.
