Cakes and Frostings

FRESH APPLE CAKE

  • 2 Eggs
  • 1 cup Oil
  • 2 cups Sugar
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking soda
  • 1 tablespoon Water
  • 2 cups Flour, all-purpose
  • 2 teaspoons Cinnamon
  • 3/4 teaspoon Salt
  • pinch Nutmeg
  • 4 cups Apples, peeled and cubed
  • 1 cup Walnuts, chopped
  • 1. Preheat oven to 350°. Grease a 13x9 inch cake pan.

    2. In a large bowl, beat eggs with oil until thoroughly blended. Add sugar, vanilla, baking soda and water; beat until light and fluffy.

    3. In medium bowl, mix flour, cinnamon, salt and nutmeg. Add to large bowl and beat until smooth.

    4. Fold in apples and nuts

    5. Spread into prepared pan. Bake at 350° for 50-60 minutes or until cake tester inserted in middle comes out clean.

    6. Cool and serve from pan.
