Cakes and Frostings

COCOA-NUT LAYER CAKE

  • 1/2 cup Cocoa powder
  • 1/2 cup Water, boiling
  • 1 3/4 cups Flour, all-purpose
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1/8 teaspoon Salt
  • 1/2 cup Butter, softened
  • 2 cups Sugar
  • 2 Eggs
  • 1 teaspoon Vanilla
  • 1 1/3 cups Buttermilk
  • 1/2 cup Nuts, chopped
  • 1 cup Whipped Cream
  • 1 container Chocolate Frosting
  • 1. Preheat oven to 350°. Grease and flour three 8 inch round cake pans.

    2. In a small bowl, mix cocoa and water. Cool completely.

    3. Sift flour, baking powder, baking soda and salt. In a lg bowl combine butter, sugar, eggs and vanilla. Beat at high speed until light and fluffy (5 mins). At low speed, blend in flour mix alternately with buttermilk; start and end with flour mix. Beat until smooth.

    4. Measure 1-2/3 cups batter into a small bowl. Stir in 1/2 cup nuts and pour into a prepared pan. Add cocoa mix to remaining batter; mix until smooth; divide evenly between other 2 pans.

    5. Bake 30-35 mins. Cool 10 mins in pans then remove from pans and cool completely on wire racks.

    6. Place 1 chocolate layer on plate and spread with 1/2 the whipped cream. Place nut layer on top of that. Spread rest of whipped cream on top of nut layer and top with the other chocolate layer. Frost top and sides of cake with frosting and store in refrigerator.
