CHICKEN POPPERS

  • 1 pound Chicken breasts, cubed
  • 1/2 cup Egg substitute
  • 1/2 cup Bread crumbs, toasted
  • 1/4 cup Corn meal
  • 1/4 cup Garlic salt
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Paprika
  • 1/4 teaspoon Pepper
  • Cooking spray
  • 1/4 cup Salsa
  • 1/4 cup Mayonnaise, fat-free
  • 1 tablespoon Cilantro, chopped
  • Preheat oven to 425°. Dip chicken breast in egg substitute. On a plate combine bread crumbs, cornmeal, garlic salt, salt, paprika and pepper. Cover baking sheet with parchment paper. Spray with cooking spray. Arrange chicken on baking sheet. Spray chicken with cooking spray. Bake for 5 minutes, flip over and bake another 5 minutes. To make hot salsa sauce: In a bowl combine salsa, mayonnaise and cilantro. Stir well.

    6 nuggets and 2 tablespoons sauce per serving.
