MISS MARY'S DOWN HOME BUTTERMILK BISCUITS

  • 2 cups Flour, all-purpose
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1/4 cup Lard
  • 3/4 cup Buttermilk
  • In a mixing bowl, stir together the flour, baking powder, baking soda and salt. With a pastry cutter or two knifes, cut in the lard or shortening until the mixture is in very fine crumbs. Stir in the buttermilk and knead for about 30 seconds or until the dough is no longer sticky. Don't overknead, as this will make the biscuits tough.

Roll out the dough to a little less than 1/2 inch thick and cut into rounds with a 2-inch cutter. Place on a greased baking sheet.

Bake at 450° oven for about 15 minutes, or until golden brown. Serve immediately. Yield: about 16 biscuits.
