Cakes and Frostings

APPLE CAKE

  • 4 cups Apples, diced
  • 2 cups Sugar
  • 1 teaspoon Cinnamon
  • 1 cup Nuts, chopped
  • 2 large Eggs
  • 1/2 cup Oil
  • 2 teaspoons Vanilla extract
  • 2 cups Flour
  • 1/2 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Salt
  • Preheat oven to 350°.

    Grease a 13x9x2 baking pan (do not flour).

    Mix together apples, sugar, chinnamon and chopped nuts. Set aside.

    In large mixer bowl, beat together eggs, oil, vanilla, flour, baking powder, baking soda, salt.

    Put Apple mixture in baking pan, fold batter over mixture. Bake at 350° for one hour. Can be served warm or cold.
