BEEF EN DAUBE

  • 2 pounds Beef, cut into 1-in. cube
  • 1/2 cup Green olives
  • 1/2 cup Orange juice
  • 1 bottle Anchovy fillet
  • 1/2 cup Pimientos
  • 2 Garlic cloves
  • 1 tablespoon Onions
  • 1 cup Tomato juice
  • 1 cup Red wine, dry
  • 4 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1/2 teaspoon Oregano, dried
  • Combine olives, OJ, anchovies, pimentoes, garlic and onion. Puree in food processor until smooth.

    In your dutch oven, heat the oil and when hot brown beef cubes.

    Cover the beef with the puree, add the tomato juice and wine. Mix in the salt, pepper and oregano.

    Cover dutch oven and cook for a couple of hours at 300º. This can be done oven-like or simmered slowly over camp stove. Cook it until the meat is tender. You may have to add a cup or so of water.
