HOPE'S BLUEBERRY COBBLER

  • 12 tablespoons Butter
  • 2 or 3 cups Freash Blueberries
  • 3/4 teaspoons Sugar
  • 1/2 cups Milk
  • 1 Egg
  • 2 teaspoons Baking powder
  • Pre heat oven to 375° melt 4 tablespoons of the Butter and Pour into an 8" square cake pan, spread evenly and arrange Blueberries over it.

    Mix 1/4 tablespoon of Salt with 1/4 cup of the sugar and sprinkle evenly over the Blueberries,and set aside.

    Mix together flour, Baking Powder,remaining 1/2 cup sugar and remaining 1/2 teaspoon salt

    in bowl, Stir in milk and egg mixture,and beat until smooth, Pour over Blueberries. Bake for 30 Min. or till clean tooth pick.

    Serve fruit side up. serve plain are with whipped toppings, or Ice Cream on top.

    Optional: use 3 cups peeled sliced tart apples or 3 cups peaches,or 3 cups blueberries.
