BIGWHEEL'S CHICKEN BRINE

  • 1/2 gallon Water, hot
  • 1/2 cup Pickling spice
  • 1/2 cup Sugar, granulated
  • 1/4 cup Honey
  • 1/4 cup Soy sauce, dark
  • 1 tablespoon Black pepper, fresh ground
  • 1 tablespoon Onion flakes
  • 1 tablespoon Garlic powder
  • 1 Bay leafs
  • 1 tablespoon Peppercorns
  • 1 teaspoon Italian seasoning
  • Combine all and shake well.

    If time permits, let it sit for several days at room temp. Shake a couple times each day.

    The day before you will use it, place the brine in the refrigerator.

    Let chicken soak for 8 hours. No need to rinse before cooking.

    This makes enough for 1 whole chicken.
