CHEESY SCALLOPED POTATOES
For sauce, cook onion in margarine till tender. Stir in flour, salt, and pepper. Add milk, all at once. Cook and stir until thickened and bubbly. Remove from heat. Place half the sliced potatoes in a greased 1-quart casserole. Cover with half the sauce. Repeat layers. Stir in 3/4 cup of the cheese into thickened sauce till melted. Sprinkle 1/4 cup remaining chees over top before serving.
