Cakes and Frostings

BANANA CAKE

  • 2 cups All Purpose Flour
  • 1 1/2 cups Sugar
  • 1 1/2 teaspoons Baking powder
  • 3/4 teaspoon Baking soda
  • 1 cup Mashed banana
  • 1/2 cup Buttermilk
  • 1/2 cup Shortening
  • 2 Eggs
  • 1 teaspoon Vanilla
  • In a bowl, combine flour, sugar, baking powder, baking soda, and 1/2 t salt. Add banana, buttermilk, shortening, eggs, and vanilla. Beat with an electric mixer on low speed till combined. Beat on medium speed for 3 minutes.

    Pour batter into greased bundt pan. Bake in a 350° oven for 30-35 minutes or till a toothpick comes out clean. Cool on racks for 10 minutes. Remove from pans. Cool on racks. Serves 12.
