HUNGRY MAN CASSEROLE

  • 1 pound Ground beef
  • 1 large Onions, chopped
  • 2 Garlic cloves
  • 1 teaspoon Dried basil, crushed
  • 1/2 teaspoon Dried oregano, crushed
  • 1 teaspoon Salt
  • 1/4 teaspoon Black Pepper, divided
  • 1 1/2 pounds Potatoes, peeled, thinly sliced
  • 1 ounce Parmesan cheese, divided
  • 1/2 cup Beef broth
  • Preheat oven to 400°. In skillet, cook beef 3 minutes or until no longer pink; remove to platter with slotted spoon. Add onions to skillet. Cook 3 minutes till softened. Return meat to skillet. Stir in garlic, basil, oregano, 1/2 t salt, and 1/8 t pepper. In 2 qt baking dish, spread 1/3 meat mixture, cover with 1/3 potato slices, sprinkle with 1 T cheese and 1/4 t salt and pepper. Repeat for 2 remaining layers. Pour broth over casserole. Bake uncovered 1 hour until potatoes are tender.
