EASY BRUSCHETTA

  • 2 cups Tomatos, peeled and chopped
  • 1/4 cups Fresh basil, chopped
  • 3 or 4 tablespoons Extra Virgin Olive oil
  • 1 tablespoons Sea salt
  • 8 slices Italian bread
  • 1 or 2 Peeled garlic cloves
  • Preparation: Toast the slices of italian bread and brush one side with garlic clove. This will impart delicious garlic flavour.

    Blanche tomotoes just enough to make them easy to peel. Chop them and place in bowl.

    Mix remaining ingredients together, taking care not to mash the tomato, and spoon on the tomato mixture.

    Drizzle some extra virgin olive oil over the prepared brushetta
