HOMEMADE CARAMELS

  • 2 cups Sugar, granulated
  • 1 cup Brown sugar, light
  • 1 cup Butter or margarine
  • 2 cups Half and Half
  • 1 cup Corn syrup, light
  • 1 1/4 teaspoons Vanilla extract
  • In heavy 4 quart saucepan, mix all ingredients except the vanilla extract. Cook over low heat, stirring occassionally until sugars dissolve and butter melts, about 20 to 25 minutes. Continue cooking without stirring until thermometer reaches 248°. Remove from heat. Stir in vanilla. Makes enough for 2-3 batches of Caramel Bars
