Baked Candied Sweet Potatoes

  • 1/2 cup Brown sugar, packed
  • 2 Tablespoons Orange juice
  • 1 teaspoon Pumpkin pie spice
  • 1 teaspoon Vanilla extract
  • 3 lbs (7-8 cups) Sweet potatoes, peeled/cut in chuncks
  • 2 Tablespoons Butter or margarine, cut up
  • In a large bowl combine brown sugar, orange junce, pumpkin pie spice and vanilla. Add sweet potatoes; toss to coat. Transfer to a 3 qt rectangular baking dish.Dot with butter.

    Bake, covered, in a 350° oven for 40 minutes. Remove from ovenand stir gently, spooning syrup over potatoes. Bake, uncovered, for 15 to 20 minutes more until potatoes are tender. Makes 8 to 10 servings MAKE AHEAD TIP: Prepare and bake as above, cool completely.Cover and refrigerate several hours or overnight. Bake, covered in a 325° oven for 30 to 35 minutes or until heated through.
