Beef, Casseroles, Pork Mutton Veal

Beef Or Pork Tongue Hannah

  • 1 Beef tongue or
  • 3-4 Pork tongue
  • ~ Water (enough to boil them)
  • 1 stalk Celery
  • 1 Leek
  • 1 Laurel leaf
  • ~ Salt
  • 1 Carrot
  • 1 Onion
  • 4 Peppercorns
  • 2 tablespoons Butter or margarine
  • 1 small Onions, diced
  • 1 cup Tongue bboiling liquid
  • 2 tablespoons Flour
  • 1 Garlic, finely minced
  • 1 1/8 small Can Mushrooms
  • 1 Juice of 1 Lemon
  • ~ Salt and pepper
  • 1/2 cup Sour cream
  • 1/2 can Tomatos peeled
  • Boil tongue in water, clery, leek, laurel leaf, salt carrot, onion, and peppercorns, until pierced skin can be removed.About 3 hours after the tongue is cool enough to handle. peel and cut into 1" cubes. Reserve and garlic in butter, tilllimp.

    Add flour and cook for 2 minutes.Add broth and bring to a boil. reduce heat, add mushrooms, tomatoes, lemonn juice, salt and pepper.Add the tongue cubesanbd let heat through.

    Add sour cream and take off heat.
