Koenigsberger Klopse

  • 1 pound Ground beef (best 1/2 beef and 1/2 pork)
  • 1 Egg
  • 2 Anchovies fillet.minced
  • 3 cups Beef stock
  • 2 Peppercorns
  • 1/2 teaspoons Sugar
  • 1 Egg yolk
  • 1/2 Onion, minced
  • ~ Salt and pepper
  • 1 Laurel leaf
  • 4 tablespoons Bread crumbs
  • 1 Lemon juice
  • 1 Small jar Capers
  • Mix meat,bread, egg, onion anchovies fillets with pepper and salt and form 8 ato 10 small balls.

    In a large pan bring the stock to boil.

    Add the laurel leaf and pepper corns.

    Add the meat balls and let simmer for about 25 minutes.

    Remove meat from broth.cpver, . keep warm., Pourbroth through a sieve and return to heat, Add bread crumbs and let simmer for aabout 5 minutes.

    Bring top taste with the sugar, lemon juice and salt and pepper.

    Remove from heat and stir in the egg yolk and apers,
