German Honey Cookies

  • 3 oz Citron, cut into tiny pieces
  • 3 oz Candied orange peet cut in tiny piec
  • 3 oz Candied lemon peel in tiny pieces
  • 1 cup Blanched almonds, chopped
  • 1 teaspoon Grated lemon rind
  • 3 Tablespoons Cinnamon
  • 1 Tablespoon Cloves
  • 3 1/2 cups Powdered sugar
  • 6 Eggs
  • 1/4 cup Orange juice
  • 1 pint Honey
  • 2 Tablespoons Hot water
  • 5 cups Flour
  • 1 Tablespoon Baking Soda
  • 1 teaspoon Lemon rind, grated
  • IN a large mixing bowl, combine citron,orange peel, lemon peel, blanched almonds, lemon rind, cinnamon, cloves and powdered sugar. Add eggs and orange juice -beat until light.

    Put honey and hot water in a pan on stove; bring to boiling point. Remove from burner and cool until lukewarm.

    Sift together flour and bakingsoda. Alternately combine flour and eggmixture to warm honey, beating well after each addition.

    Cover dough and let stand 12 hours or more.

    Preheat oven to 350°, Place about a tablespoon of dough per cookie onto a greased cookie sheet. Bake 8 minutes or until light brown. Makesavout 200 cookies, depending on size
