Baked Cauliflower Casserole

  • 1 large CAULIFLOWER HEAD
  • 1 cans Chicken broth
  • 1 tablespoons I can't believe it's not butter Light
  • 1/4 cups Half and half, fat free
  • 2 tablespoons Parmesan cheese
  • Cut cauliflower into bite size pieces, place in large saucepan, pour can on chicken broth over cauliflower cover and cook till tender. Drain cauliflower and place in large bowl. Add butter or margarine, half and half, salt and pepper and mash slightly with potato masher till mixed. Place in butter-flavor sprayed casserole, top with grated cheese and sprinkle with paprika for color. Place in hot oven for about 20 minutes till cheese melts and casserole is bubbly.
