Chocolate Chip Muffins

  • 1 1/4 cups Flour, all-purpose
  • 1/3 cups Cocoa
  • 1 teaspoons Baking soda
  • 6 tablespoons Margarine, melted
  • 1 cups Sugar
  • 1 tablespoons Skim milk
  • 1 tablespoons Vinegar
  • 1/2 teaspoons Vanilla
  • 1/8 cups Chocolate chips
  • Place cupcake liners in regular cupcake-size tins (for 16 cupcakes/muffins). Heat oven to 350 F. Stir together the flour, cocoa, and soda in a bowl. In a smallsaucepan, melt the spread. Remove from heat and stir in sugar then milk, vinegar, and vanilla. Stir or whisk the wet mixture into the dry until blended. Fill cupcake liners a little bit over 1/2 full. Bake approximately 12 to 15 min. untilcake bounces back to the touch. (My oven is weird so it may take a little less or longer, depending on yours).
