Oven "Fried" Chicken
Season buttermilk as desired (salt, pepper, garlic powder, cayenne, lemon juice, Dijon mustard).
1. Dip chicken in buttermilk (or soak 30 minutes or longer if you've got the time).
2. Dip chicken in cornflake crumbs. Place on cookie sheet sprayed with Pam.
3. Drizzle each breastwith 1/2 tsp oil, or spray with Pam. Bake at 425 for 10 minutes.
4. Turn over chicken. Again drizzle each breast with 1/2 tsp oil, or spray with Pam. Again bake at 425 for 10 minutes or until done.
Points: Per serving, I count 1 pt per ounce of chicken, 1 pt for the breading, and 1 pt for the oil, unless I just used Pam.
