Oatmeal Cookies

  • 1 1/2 cups Oats, quick-cooking
  • 1 cups Brown sugar
  • 1/2 cups Oat bran
  • 2 tablespoons Peanut butter, creamy
  • 1/2 cups Flour, all-purpose
  • 1/3 cups Non-fat dry milk powder
  • 2 tablespoons Cocoa powder
  • 1 teaspoons Vanilla
  • 1 cups Apples, chopped
  • 1/2 cups Dates, chopped
  • 1 teaspoons Baking soda
  • Preheat oven to 375F. Spray cookie sheets with vegetable cooking spray. In a large mixer bowl, combine oats, oat bran, flour, cocoa powder, baking soda and sugar. In a cup, combine peanut butter, milk and vanilla. Stir into dry mixture; thoroughly combine. Add apples and dates. Batter will be stiff. Drop by tablespoonfuls onto prepared cookie sheets. Bake 15 to 17 minutes. Makes 48 cookies.
