Weight Watchers Chex Mix
Take large roasting pan and spray bottom and sides with Butter Pam. Put in first 4 ingredients and mix with large spoon, spraying several times with the ButterPam. Sprinkle on the Ranch dressing evenly and stir to mix; sprinkle on the taco seasoning and stir to mix. May add thegarlic and onion powder to your own taste, mixing well.
Bake at 250 degrees for90 minutes; stir at 30-minute intervalsand spray with a little more Butter Pam. Cool and place in airtight container.
Note: I’d been looking for something I could snack on and this seems to fit the bill. I’d copied off several from the board but wanted to give myself a little more variety so I came up with the above ingredients and made it Friday evening. It is tasty and the popcorn stays crunchy. I did my popcorn in plain brown lunchbags using 1/3 cup of regular popcorn and microwaving on high for 2 ½ minutes. This will vary with microwaves so experimen—or if you have a hot air popper use thatt. The popcorn was super cheap for awhole bag of plain. Be sure to remove any unpopped kernels before adding…I didn’t and they’re hard on the teeth!! If you don’t like taco seasoning you might want to use two of the Ranch Seasoning packets. I found the “Kashi” “Go Lean” in the grocery store cereal aisle where the “healthy” cereals are located. Kashi hadbeen mentioned on the WW board before…it is high in fiber and very “point-friendly”. The pretzels I used were small square waffle shaped but were the least calories I could find. I was looking to make something I could bring in baggies to work—I figure 2 cups would be a good snack size for 2 pts.
