French Fried Potatoes
Cut potatoes in 3" x 3" sticks.
Pour oil into medium size pot to depth of 5-6 inches. Heat oil to 325° on deep fat frying thermometer With slotted metal spoon,add potato sticks (10 at a time) fry 2 minutes, until very lightly colored. Remove with spoon to pan. Continue with remaining sticks.
Second frying: Heat oil to 375°, working in 2-3 batches, add sticks to oil, fry 1-1/2 - 2 minutes until golden brown. Transfer to towel and salt as desired.
