Sugarless Cookies

  • 1 cup Raisins
  • 1/2 cup Chopped dates
  • 1 cup Peeled sliced apples
  • 1 cup Unsweetened, apple juice concentrate
  • 1/4 cup Margarine, softened
  • 2 Egg whites
  • 1 teaspoon Vanilla extract
  • 2 cups Whole wheat-flour
  • 1 teaspoon Baking soda
  • 1 cup Quick cooking-oats
  • 1/2 cup Chopped walnuts
  • Boil raisins,dates, and apple slices injuice concentrate for 10 minutes. Stir margarine into hot mixure. Allow to cool. Pout raisin mixure into a mixing bowl.Add egg whites, and vanilla. Beat well.Stir in flour, baking soda, and oats. Add walnuts, if desired. Drop by teaspoonfuls onto a greased baking sheet. Bake at 350 degrees for 15 minutes or until lightly browned.

    Makes 48 cookies.
