Blue Cheese Walnut Bread

  • 2 cups Bread flour,divided
  • 1 packages Rapid rise yeast
  • 1 teaspoon Sugar, granulated
  • 1 teaspoon Salt
  • 1 cup Milk
  • 1 tablespoon Butter
  • 1 Eggs
  • 3/4 cup Cheese, Bleu, crumbled
  • 1/2 large cup Walnuts, chopped
  • Combine 1 cup of the flour, yeast, sugar and salt in a medium bowl; stir to mix. Combine milk and butter in a sauce pan: heat to 120 to 130 degrees. Pour milk mixture into flour mixture; stir untill combined. Add egg; beat untill smooth. Add the remaining 1 cup of flour; stir untill flour is completely incorporated. Beat vigerously for about 200 strokes. Let batter rest 10 minutes. Fold in cheeseand walnuts.

    Divide batter among 2 wellgreased mini-loaf pans(4 X 7 1/2) . Putpans in a warm, draft-free place and lightly cover all three with a single sheet of plastic wrap. Let rise 30 to 45 minutes, or untill just below the rim of pans.

    Bake in a preheated 350° oven 35 to 40 minutes, or untill a wooden pick inserted in the center of the loaf comes outclean. Because of the cheese, the tops of the loves will brown before the breadis fully baked, so after about 25 minutes of baking, loosley cover the top of the loves with foil. Let cool in the panson a wire rack for 20 minutes, then remove from pans and place on wire racks tocool completely.

    Don't remove the breadfrom the pans too soon. The loves take a while to firm up and will deflate if you remove them from the pans while they are still hot.
