Pumpkin Muffins

  • 2 1/2 cups Flour, all-purpose
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Nutmeg
  • 1 1/2 teaspoon Cinnamon
  • 1 1/2 cups Apple juice concentrate
  • 1/2 cup Skim milk
  • 1 Eggs
  • 1/4 cup Canola oil
  • 1 1/2 cup Canned pumpkin
  • 3/4 cup Raisins
  • Combine flour,baking powder,nutmeg, andcinnamon in large bowl. Mix apple juiceconcentrate, milk, egg, oil, and pumpkin in medium bowl. Add wet ingredients todry ingredients. Stir until moistened. (Batter will be slightly lumpy.) Fold inraisins. Pour batter into 12 lined muffin-tin cups.

    Bake at 400 degrees for 20 minutes.

    Makes 12 muffins.
