Blueberry Pancakes

  • 1 Egg
  • 1 cup Buttermilk
  • 1 tablespoon Vegetable oil
  • 1 cup Flour, all-purpose
  • 1 tablespoon Sugar
  • 1 tablespoon Baking soda
  • 1/2 teaspoon Salt
  • 1/2 cup Blueberries fresh or frozen
  • Beat egg in a bowl. Add buttermilk, oil, flour, sugar, baking soda, and salt. Mix well. Stir in blueberries. Pour batter by spoonfuls onto a hot greased griddle. Cook until golden brown, turning once.

    Makes 10 pancakes.
