Ground Turkey And Bean Burritos

  • 8 8-inch Vegetillas or spelt tortillas
  • 1/2 pounds Ground turkey
  • 1 cups Chopped onion
  • 2 cloves Garlic, minced
  • 1 15-oz. can Black or Pinto beans, rinsed & drained
  • 1/2 cups Salsa
  • 2 teaspoons Chili powder
  • Several dashes Tabasco
  • 1 cups (4 oz.) Shredded reduced-fat cheddar cheese
  • 1 1/2 cups Shredded fresh spinach
  • 1 1/2 c. Shredded lettuce
  • Stack tortillas; wrap tightly in parchment and then foil. Heat in a 350° oven for 10 minutes.

    For filling, cook ground turkey, rinse and drain. Cook onion and garlic. Stir in ground meat with beans, salsa, chili powder, and pepper sauce. Heat through.

    Spoon about 1 cup filling onto each tortilla; top with 1 T. cheese.Fold botton edge up and over filling, just until covered. Fold in opposite sides. Roll up, tucking in sides. Secure with wooden picks. Arrange tortillas, seam side down, on a parchment-lined baking sheet; cover with parchment and then foil. Bake in a 350° oven about 10 minutes or till heated through.

    Serve burritos atop a mixture of spinach and lettuce. Serve with extra salsa, remaining cheese, and sour cream, if desired.
