Jambalaya
1. Melt butter in large, heavy sausepanover medium-high heat. Add onion, bell pepper, garlic, and smoked sausage and cook for 5 minutes or until vegetables are tender, stirring often. 2. Stir rice, chicken broth, tabasco green pepper sause, tomatoes, and if desired cajun seasoning to taste; mix well and bring to a boil. 3. Reduce heat, cover and simmer 25 minutes or until rice is tender. 4. Remove from heat and let sit 5 minutes long before fluffing with a fork. Makes 6 servings.
