Jambalaya

  • 2 tablespoons Butter or margarine
  • 1 medium Onions, chopped
  • 1 cups Bell peppers
  • 2 Cloves
  • 1 pounds Smoked sausage
  • 1 cups Rice
  • 2 cups Chicken broth
  • 3 tablespoons Tabasco, green pepper sause
  • 1 can (14 1/2 oz) Tomatoes, diced & drained
  • ~ Cajun seasoning to taste
  • 1. Melt butter in large, heavy sausepanover medium-high heat. Add onion, bell pepper, garlic, and smoked sausage and cook for 5 minutes or until vegetables are tender, stirring often. 2. Stir rice, chicken broth, tabasco green pepper sause, tomatoes, and if desired cajun seasoning to taste; mix well and bring to a boil. 3. Reduce heat, cover and simmer 25 minutes or until rice is tender. 4. Remove from heat and let sit 5 minutes long before fluffing with a fork. Makes 6 servings.
