Grilled Chinese Chicken Salad

  • 1 pound Strips of chicken breasts, grilled
  • 1 package Fresh crisp greens
  • ~ Red cabbage, sliced
  • ~ Snow peas
  • ~ Cilantro
  • ~ Red bell pepper, sliced
  • 2 cans Sweet mandarin oranges, drained
  • ~ Red onion, sliced
  • ~ Tomatoes, cut in chunks
  • ~ Chinese noodles
  • ~ Peanuts
  • ~ Sesame seeds
  • ~ Chinese peanut dressing
  • Mix everything together except the dressing. You can make your own choice on the amounts of each ingredient you want touse. Then top with Peanut dressing.

    PEANUT DRESSING- 1/2 cup crunchy peanut butter 2 tablespoons soy sauce 1 teaspoon white sugar 2 drops hot pepper sauce 1 clove garlic, minced 1/2 cup water In a small bowl, stir together peanut butter, soy sauce, sugar, hot pepper sauce and garlic until well mixed. Gradually stir inwater until texture is smooth and creamy. This recipe makes 1 cup. I double this recipe. You can also buy peanut dressing at the supermarket.
